From 2005, our wineyard are worked organic, the yield lower from 60hl/ha to 15 to 25hl/ha ; Such little yield gave us the opportunity to pick the grape late and having very good balance in maturity. Then with manual picking, we take grape in very good sanitary condition, in that situation we can assume fermentation without many sulfite and in natural yeast(indigenous).
Pneumatic pressing, cold settling then we send down the juice to the barrel for long fermentation in OAKS. About 12 weeks of fermentations folowed by several months of aging on lies.
Our premium cuvée is issued from our best barrels of Chardonnay, Chenin and Mauzac, blended after one year of aging in oaks.See more

Winemaking after stemming in cement tanks, long macerations from 6 to 15weeks, daily pigeage; fermentation in natural yeast then we age in OAKS, only few new oaks; 6 to 12 month later we select and blend with Christian Lacassy to built the 3 red wines.
